Our go-to meal is a wok stir-fry. It doesn't require planning when grocery shopping - we simply buy an assortment of vegetables that can be stir-fried. We may add some type of seitan or tofu chunks. Sometimes we make our own sauce, sometimes we just use a sachet of store-bought chow mein, sweet-and-sour or the like. Variations are endless, and the result can be served with rice, noodles or quinoa. Plus it only takes 15 minutes to prep and cook it - what's not to like?!
